Rainbow Salad
Ingredients
1/2 sliced red cabbage
1/2 sliced green cabbage (or 1 cup of red or green cabbage)
3 medium carrots grated
1/2 cup of chopped parsley
4 scallions sliced or 1/4 cup of chopped chives
1 cup of cashews (roast in oven with 2 tbsp of coconut oil if you have time, or throw straight into salad as is. If roasting turn oven to 400 degrees, roast for about 7 minutes or until brown.
Dressing
1/4 cup of nutty butter - I use peanut butter
juice of a whole lemon
1/3 cup of chopped cilantro
2 tbsp of rice vinegar
1/3 cup of olive oil
Place all dressing ingredients in a bullet of mixer. If too thick add ice cold water, a teaspoon at a time and blend for the consistency you desire. Drizzle over salad and voila! Enjoy Xx
