White Bean Kale Tuscan Soup
Hearty soups are an incredibly simple to make, one pot deal my kind of cooking and an easy way to add more vegetables to your diet. You can add more protein to this soup, such as cooked chicken, ground beef, sausage or red lentils, if desired.
Ingredients
3 cups of home cooked veggie broth or store brought
1/2 cup of white wine
3 medium diced carrots
1 small whole brown onion diced
1 cup of diced brown mushrooms
1 bunch of washed kale, destalked and chopped
1 15oz can of white beans rinsed
2 tbs of chopped thyme and oregano (whatever you have in the frigde)
red chili flakes to taste
Method
Sautee the onions, carrots and mushrooms until soft. 5 - 7 minutes. Add the wine and let most of the liquid evaporate. Add the broth and herbs and bring to the boil, turn the heat to low and simmer for 15-20 minutes. Add the kale and beans for another 5 minutes.
Serve with a dollp of Non-fat Greek yoghurt, bunch of fresh chopped parsley or with a sprinkle of parmesan cheese. Enjoy!!
