The Easy Healthy Cookie

Ingredients

1/2 cup raw sliced almonds

1/2 cup raw pumpkin seeds

1/2 cup unsweetened coconut flakes

1 large egg (if dairy free replace with 1 tps of ground flax seeds w 3 tbs of water and let it sit for 5-10 minutes to thicken)

1/4 cup of maple syrup

1 tsp of vanilla essence

sea salt to sprinkle

melted dark chocolate for dipping

Method

Set oven to 325 F. In a large bowl, mix almonds, pumpkin seeds, coconut, egg, syrup, vanilla together. With an ice cream scoop place mixture on a baking tray with parchment paper. Slightly flatten scoops of mixture with a spoon and bake for 12-15 minutes until cookies are golden.

Cool for 15 minutes than place cookies with tray into the fridge for 10 minutes. After the fridge, gently peel the cookies from the parchment paper.

I melt the dark chocolate in the microwave - 30 second increments, stirring as you go. Once melted dip the tray side of the cookie into the chocolate. Place opposite side on a plate and sprinkle the chocolate with sea salt.
