One Pan Breakfast

Ingredients

6 cherry tomatoes

a handful of sliced mushrooms

1/2 cup of chick peas (strained and rinsed)

2 breakfast sausages thickly sliced

2 eggs

1 tbs of Worcestershire sauce

olive oil to drizzle

bunch of fresh parsley roughly chopped

Method

Preheat the oven to 425F. In a small skillet add the mushrooms, chickpeas and tomatoes. Drizzle with olive oil and Worcestershire sauce. Transfer to oven and bake for 5 minutes. Remove from oven and add in sausage to the mixture, return to over for another 10 minutes. Remove from the oven, make a little room in the middle of the mixture with a spoon and crack both eggs into the middle. Return to the oven for a further 6-8 minutes until the egg is cooked to your liking. Remove from oven. Season with salt and pepper and sprinkle parsley over the entire dish. Serve hot!
