Goddess Chicken Salad

Ingredients

1 pound of chicken breast (note to save time you can purchase a pre cooked chicken and cube the chicken breast)

2 cups of broccoli florets (note I prefer raw but you can steam for softness)

2 cups of halved red grapes

1 1/2 cups of celery

1/2 cup of fresh roughly chopped parsley

2 tbs of chopped shallots

1/2 cup of sliced scallions

1/2 cup of Non-fat Greek Yoghurt

3 tbs of balsamic vinegar

1 tbs of water

Method

Season the chicken breast with salt & pepper and rub with 1 tbs of olive oil. Cook in a fry pan or oven until ready (165F with a cooking thermometer). Once cooled dice into 1 inch pieces.

Whisk balsamic, yoghurt, water, 1 tbs of olive oil until mixed. Add the shallots and stir gently until incorporated. Season to taste.

Combine chicken, grapes, celery, parsley, shallots in a large bowl. Drizzle the dressing over bowl ingredients, toss to serve.

NOTE: if you need more protein, add cooked 1/2 cup of cooked quinoa, wild rice or red lentils. Serve as the base to the salad.
