No Flour Waffles
Shhhh don’t tell the kids. Broccoli has sooooo many health benefits, vitamins, minerals and antioxidants, seriously you are missing out if you neglect to use it everywhere you possibly can. Not to mention, broccoli provides the perfect waffle crunch. Trust me, try it for yourself. Comment below after you fill your belly.
Ingredients - for 2 waffles in the mini W maker
1 egg
1/4 cup of cooked steamed or stir fried broccoli florets (no stalks). You can cook the night before and store in the fridge
2 tbs of any grated cheese (we prefer parmesan)
Salt & Pepper to taste
Note: I did have cooked quinoa in the fridge so I added 2 tbs to the mixture. Extra protein for the WIN.
Whisk all ingredients together. Spray the waffle machine with olive oil (if you haven’t purchased an olive oil sprayer, you’re missing out).
Place 2-3 spoonfuls into your waffle maker. If the ingredients spill over the side, you are using too much batter.
Top with sliced avocado, diced tomato or salsa, sour cream, fresh herbs and enjoy!
