The Veggie Salad with peanut & dijon dressing

Ingredients

2 cups of any green leaf (spinach, kale or a spring mix)

1/2 cup of broccoli chopped into bite size pieces

1/2 cup of diced red pepper

1/2 cup of purple cabbage sliced

1/2 cup of chickpeas (rinsed)

2 medium carrots shredded

Dressing (for the blender)

2 tbs of peanut butter

1 tbs of olive oil

1/2 of a lime squeezed

1 tbs of dijon mustard

1/2 tsp of maple syrup

bunch of coriander roughly chopped

Place all ingredients in a blender and mix. If too thick, add one tablespoon at a time of cold water to the mixture and blend.

Toss the salad together and drizzle the dressing over the top.
