Eggs on the Run
Ingredients
Any 3 veggies in your fridge, diced into small pieces, 1/2 a cup of each. Examples mushrooms, peppers, spinach, broccoli, zucchini or cauliflower
3 green onions finely sliced
6 eggs
1/4 cup of parmesan cheese
If you have fresh herbs in your garden, add in 1 tbs of finely chopped dill, parsley or chives for an extra flavor punch & sweet goodness
Method
6 cup muffin pan or double the ingredients to fill a 12 cup muffin pan. Turn the oven to 350F.
Oil the muffin holder lightly. Place 1 tbs of olive oil into a fry pan and cook the veggies, until soft.
Whisk the eggs and season to taste. Add the veggie mixture, parmesan cheese, herbs if you have, to the egg mixture. Scoop the mixture evenly into the muffin cups and bake for 15 minutes or until set.
