Eggs with Tomato & Greens
Ingredients
1/2 diced brown onion
1 24oz can of whole tomatoes (place tomatoes in a bowl and break down with your hands)
1/2 bag of spinach or any green leaf (I often use bok choy and works just as well)
4 eggs
1/2 cup of grated parmansen
pinch of chili flakes
salt and pepper
Method
Turn oven to 375F
In a large round baking dish or skillet, fry the onions with a splash or olive oil. Season to taste, 5-7 minutes. Add your green leaf and combine. Cook until greens are soft. Take the onion and green leaf mixture off the stove top to add the tomatoes. Place back on stove top, stir to combine and bring to the boil. Turn down to low and let the mixture thicken for 7-10 minutes.
Add chili flakes to taste.
Make little pockets in the mixture and add your eggs. Sprinkle with parmesan and place in the oven. Bake for 8-10 minutes until your eggs are cooked to your preference. Serve immediately. Suggestion serve with sourdough toast.
